Another way to care for ourselves is indulging in some of our favorite things. Not overindulging, but occasionally having our favorites treats to create balance in our lives. For me that is a good Oatmeal Chocolate Chip Cookie.
I love them and it’s probably my favorite desert of all time. So, imagine my dismay when I did my very first detox reset for my Lupus. Twenty-one days I ate nothing but fruit, vegetables, seeds and nuts. I took out all the other foods and slowly introduced them back into my diet to see which ones my body reacted too. My culprits? Dairy and wheat a/k/a gluten.
I was mortified. I can give up a lot of foods, but Tacos an Oatmeal Chocolate Chip Cookie was not in my plan of things I never wanted to eat again.
My experiments began trying to find the perfect chocolate chip cookie that had no wheat or dairy in it.
After trial and error and a few wasted batches of cookies, I have finally mastered a healthy and delicious Oatmeal Chocolate Chip Cookie that I am happy to say I enjoy as much as any other Oatmeal Chocolate Chip Cookie I ever made that was unhealthy.

Healthy Oatmeal Chocolate Chip Cookie
Ingredients
- 3/4 Cup Organic Extra Virgin Coconut Oil
- 1/2 Cup Organic Pure Maple Syrup
- 1/4 Cup Unrefined Coconut Sugar
- 1 Organic Large Brown Egg
- 1 Tsp Pure Vanilla Extract
- 3/4 Cup Nut Flour Blend
- 3/4 Cup Gluten Free Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Pink Himalayan Salt
- 1 Tsp Cinnamon
- 2 1/4 Cup Organic Rolled Oats
- 1 Bag Dark Chocolate Chocolate Chips
Instructions
- Preheat oven to 350 F
- In your mixer bowl, blend together coconut oil, coconut sugar, egg, maple syrup and vanilla.
- Once those ingredients are mixed thoroughly, add your flours, cinnamon, baking soda and salt. Mix together at low speed until combined.
- Stir in oats and chocolate chips.
- Add a spoonful of batter to an ungreased cookie sheet for 10-12 minutes.
