Instructions
Preheat oven to 350 F
In your mixer bowl, blend together coconut oil, coconut sugar, egg, maple syrup and vanilla.
Once those ingredients are mixed thoroughly, add your flours, cinnamon, baking soda and salt. Mix together at low speed until combined.
Stir in oats and chocolate chips.
Add a spoonful of batter to an ungreased cookie sheet for 10-12 minutes.
